Salsa, the topping you deserve and the topping that belongs on darn near everything. Tacos, enchiladas, burritos, chips, and the list goes on! It's always whats missing from your plate, that little extra kick needed to make for a memorable dish.
Ingredients
Chopped tomatoes, 1 1/2 cups
Chopped onion, 1/2 cup
Fresh chopped cilantro, 1/2 cup
Fresh garlic, 3 cloves
Grilled tomatillo, medium
Grilled jalapeño, large
Fresh-squeezed lime juice, 2 large limes
Salt, to taste
Steps
Set your favorite grill, or open flame source, on high to grill the jalepeño and tomatatillo
Use tongs to carefully place the vegetables just above the flame
Look for the vegetables skin to turn black and blistered, then turn until all sides are thoroughly grilled - avoid ashy white
Set aside grilled vegetables to cool for a minimum of 20 minutes
Load up the blender with the garlic, jalepeño, tomatillo, and cilantro
Blend, but use the pulse setting for about 30 seconds
Add the rest of the ingredients; salt, lime juice, onion, and tomato
